Analisis Logistik Rantai Pasok Pada UMKM BAKSO RAWASIKUT Dari Hulu Hingga Hilir

Abstract

This study aims to analyze the supply chain logistics of the Bakso Rawasikut MSME located in Telagsari, Karawang Regency, with a comprehensive approach from downstream to upstream. The focus of the study includes procurement of raw materials, production processes, distribution, and marketing of meatball products. The research method used is a descriptive qualitative approach through direct observation, interviews with business actors, and documentation. The results of the study indicate that the procurement of raw materials, such as beef, tapioca flour, and spices, is carried out through local suppliers with a daily purchasing system to maintain freshness. The production process involves the stages of grinding, mixing dough, forming, and boiling which are managed manually with strict supervision of quality. Product distribution is carried out through direct sales at the production site and marketing through local networks, including food stalls and traveling meatball traders. This study identified several challenges, such as fluctuations in raw material prices, limited production capacity, and market competition. Recommendations provided include increasing logistics efficiency, product diversification, and developing digital marketing strategies to expand market reach. These findings are expected to be a reference for other MSMEs in managing supply chains effectively in order to increase competitiveness and business sustainability.
